  • 205g Pork Loin Steak   Buy Now
  • 29g Honey
  • 43g Ketchup
  • 5g smooth grain Dijon Mustard
  • Dash of Worchester Sauce
  • Dash of tabasco sauce
  • Lemon juice- small squeeze
  • Salt and pepper


Remove pork loin from bag to bring to room temperature. Season with salt and pepper.

For BBQ Sauce:

Add ketchup, mustard, honey, worchester sauce, tabasco
Grill steak in pan but place on rind to burn fat and turn steak each side between 3-4mins.
Turn 90 degrees on same side for grill effect. Repeat.

Nicki’s Tip:
*If steak sticks to the pan then increase temperature and scrape from edges. Do not pull or tug on the steak.
Do not press down on the meat. *

Moderate temperature from high to low as steak is cooked on each side
Further reduce temperature when adding BBQ sauce.
Check for core temperature to be 34C and apply BBQ sauce on steak (each side).
Cook further for 3-4 minutes. Check core temperature for 45-50C.
Remove onto cold plate for 6-7 minutes.
Finish off with a squeeze of lemon juice and serve.
