The whole head will be cleaned and wrapped up ready to take away, and would be quite a sight to behold. A good butcher will provide the pig’s head quartered, to make this very unusual cut of pork less daunting.

We have two main head cuts available: the pig ears and the pork cheek daube. There are numerous ways to cook both of these fantastic cuts.

Fresh pig's ears are ideal for making stocks and soups. But they are also a popular ingredient in many Asian dishes. We think they are perfect when fried as snacks or canapes.

It is a cut which is typically mild in taste. But that means that it is capable of taking on complex flavours. As there is a sheet of cartilage throughout the entire ear, it must be stewed or braised for a lengthy period to become palatable - even if you plan on frying.

Pork Cheek Daube is a cut that, in our opinion, is best braised. This allows the meat to fall apart at the touch of the fork, but remaining succulent. There are many different recipes in which you braise the pork cheek daube in cider, beer or wine - all of them are delicious.
