Hake has a subtle and delicious flavour similar to and - according to many - superior to cod. The soft white flesh firms up on cooking, resulting in a dense meaty texture.
Hake are slender, deep sea members of the cod family, immensely popular in Spain and Italy. They have a long, round, almost snake like body with grey and silver coloured skin. The lateral line is white, edged black on either side. The large mouth displays sharp, pointy teeth, giving it a vicious appearance. Hake is slow growing, reaching over 100cm and 15kg in weight. Mainly feeding on prawns gives hake a pinky white coloured flesh.
We buy the whole fish on the daily auctions at Scrabster, Peterhead, or Shetland. Our fishmongers remove the scales before filleting and and portioning the fish. We work hard to bring you only the very freshest fish available.

insulated expanded polystyrene box, or a recyclable tough corrugated
cardboard box which is foil lined and insulated with bubble wrap. Both
boxes are leak-proof and sturdy.
To keep your delivery cool, it is packed along with specially designed
ice packs. Our ice packs are made with a frozen water-based gel, which
keeps the meat at the correct temperature for up to 48 hours. When the
