Hake has a subtle and delicious flavour similar to and - according to the many - superior to cod. The soft white flesh firms up on cooking, resulting in a dense meaty texture.
Hake are slender, deep sea members of the cod family, immensely popular in Spain and Italy. They have a long, round, almost snake like body with grey and silver coloured skin. The lateral line is white, edged black on either side. The large mouth displays sharp, pointy teeth, giving it a vicious appearance. Hake is slow growing, reaching up to 100cm and 4.5kg in weight. Mainly feeding on prawns gives hake a pinky white coloured flesh.
High demand and slow growth have resulted in rapidly shrinking stocks in the North Atlantic, so much so that the Southern stocks are on the MCS Fish to avoid list. Fishing quotas and good management have meant Northern stocks of North Eastern Atlantic hake are now rated 4 by the MCS.

Your meat order is kept cool in transit because we either use an
insulated expanded polystyrene box, or a recyclable tough corrugated
cardboard box which is foil lined and insulated with bubble wrap. Both
boxes are leak-proof and sturdy.
To keep your delivery cool, it is packed along with specially designed
ice packs. Our ice packs are made with a frozen water-based gel, which
keeps the meat at the correct temperature for up to 48 hours. When the
ice does melt, it stays as a gel, which prevents the delivery becoming
