Lemon Sole is a very good table fish, similar to plaice and Dover Sole. Very versatile either cooked whole on the bone or filleted. The fillets are especially popular at Christmas time rolled, stuffed and baked.
Lemon Sole is actually a member of the plaice family and it is neither yellow nor does it taste of lemon, although it has a yellow sheen when first out of the water. It is a right eyed flatfish with a smooth, slimy, reddish brown, mottled skin that is dotted with yellow and green spots. The underside is white. Lemon Sole are found in medium to shallow waters around northern Europe, preferring stony ground and gravel beds and can grow to 60cm and 3kg, but 30cm and 250-900g are more common.
Lemon Sole is widely distributed and not considered endangered. The most sustainable method of catching Lemon Sole is by purse seine net - as our are. Available all year round, but avoid eating during the spawning season May-June, the fish tends to be of poorer eating quality.
