Sea bass has a firm white flesh and thicker fillets than most which makes it suitable for a wide range of dishes. Sea bass is a superb fish with creamy white, slightly oily flesh and a good sweet flavour. Farmed origin enables us to offer it all year.
Sea bass prefer the warmer waters of the Mediterranean coasts to Southern England. It is a hunter with a steely blue back and silver flanks. The gill cover has a very sharp edge and is protected by two vicious spines. Wild Sea Bass can grow to 1m and 5kg, but farmed fish are usually sold from 300g to 1kg.
