Chicken Saltimbocca Recipe Video

Something about the combination of the prosciutto, chicken breast and crispy sage is so good. The non-original addition we make is to add grated Parmesan at the end. It goes slightly melted and adds a lovely additional layer of flavour. We recommend having it with linguine tossed in butter.

Chicken is obviously such a great choice for everyday meals.

There’s not much that’s tastier than a butterflied chicken breast – ie opened out into a lovely heart shape – basted in crushed garlic, rosemary and olive oil, and grilled on the barbecue, served with a big salad and a glass of crisp white wine.

For colder days, our favourite is tarragon chicken saute. A one-pot dish with chopped up chicken breast, and a lovely creamy mushroom, tarragon and whisky sauce.’
