Wild venison is sometimes described as clean, healthy red meat. Compared to beef, venison is not only lower in fat and calories but also higher in trace elements like iron and vitamin B. The meat has a fine, close-grained texture and very little marbling. Since venison is low in fat, using bacon or an oil-based marinade helps to add extra moisture. Venison will not benefit from long, slow cooking and is best served pink.

Our venison is from wild red deer from Scottish estates, which have grazed freely on a mixed diet which gives it the wonderfully woody, almost fruity flavour. Diced venison is hand-trimmed and cut from the haunch by our master butchers here in Linlithgow.

Ideal for stews, casseroles, or rich pies, this diced venison transforms into melt-in-the-mouth comfort food when cooked slowly.
Your meat order is kept cool in transit because we either use an insulated expanded polystyrene box, or a recyclable tough corrugated cardboard box which is foil lined and insulated with bubble wrap. Both boxes are leak-proof and sturdy.
To keep your delivery cool, it is packed along with specially designed ice packs. Our ice packs are made with a frozen water-based gel, which keeps the meat at the correct temperature for up to 48 hours. When the ice does melt, it stays as a gel, which prevents the delivery becoming wet.
