What Are Smoked Bacon Lardons?

Smoked bacon lardons are small, thick-cut pieces of bacon, carefully trimmed from streaky or back bacon and lightly smoked for a deep, savoury aroma. They’re incredibly versatile, adding a burst of umami flavour to countless dishes, whether you’re making a rich carbonara, a comforting stew, or a crispy salad topping.

Van der Mey’s smoked bacon is traditionally brine cured using a recipe dating back to 1956 and traditionally smoked over beech wood. The taste is worlds apart from the moisture and e-number injected bacon on supermarket shelves, with less contraction and moisture loss during cooking. Only whole backs are selected for this bacon, with no more than 10mm of fat and only centre cut rashers are used - with no shoulder rashers.

How to cook

How to Cook Smoked Lardons

  • Fry: Add lardons to a cold, dry pan and heat gently to render the fat. Fry for 5–7 minutes until golden and crisp.
  • Oven Cook: Spread on a baking tray and bake at 200°C for 10–12 minutes until browned.
  • Add to Dishes: Stir into pasta sauces, soups, quiches, or casseroles for instant depth and smokiness.

Cook thoroughly before serving.

Your meat order is kept cool in transit because we either use an insulated expanded polystyrene box, or a recyclable tough corrugated cardboard box which is foil lined and insulated with bubble wrap. Both boxes are leak-proof and sturdy.

To keep your delivery cool, it is packed along with specially designed ice packs. Our ice packs are made with a frozen water-based gel, which keeps the meat at the correct temperature for up to 48 hours. When the ice does melt, it stays as a gel, which prevents the delivery becoming wet.
