Put your beef stewing steak, cubed potatoes, chopped onions, garlic, and grated ginger into the slow cooker pot.
Add the tin of chopped tomatoes, tin of coconut milk, mango chutney, tomato puree, and curry powder.
Add two good pinches of salt.
Stir everything together until thoroughly combined.
Step 3 : Cook the Potato Curry
Put the lid on the slow cooker.
Cook on low for 8 hours or on high for 4 hours.
Once the cooking time is complete, taste the beef curry and add more salt if needed. The beef should be completely tender.
Step 4 : To Serve
Garnish the slow cooker curry with freshly chopped coriander if desired. Serve hot with rice and/or naan bread or enjoy it by itself as a hearty potato curry stew.
