Easy Slow Cooker Beef and Potato Curry

This recipe for an easy curry is perfect for a hassle-free meal, using a few common tinned ingredients to make a rich and flavourful sauce. By using a slow cooker, this beef curry requires minimal effort and transforms simple beef stewing steak into a wonderfully tender dish. The addition of potatoes makes it a hearty, all-in-one meal. It's a fantastic slow cooker curry for throwing together in the morning and coming home to in the evening.

Ingredients

For the curry

  • 500g beef stewing steak
  • 500g new potatoes
  • 2 large brown onions
  • 6 cloves of garlic
  • 2 inch piece of ginger
  • Tin of chopped tomatoes
  • Tin of coconut milk
  • 2 tbsp mango chutney
  • 1 tbsp tomato puree
  • 2 tbsp curry powder
  • Salt to taste

Method

  • Step 1 : Prepare the Ingredients

    1. Cube the new potatoes into bite-sized pieces.
    2. Chop the onions roughly.
    3. Crush and chop the garlic cloves.
    4. Peel and grate the fresh ginger.

  • Step 2 : Combine in the Slow Cooker

    1. Put your beef stewing steak, cubed potatoes, chopped onions, garlic, and grated ginger into the slow cooker pot.
    2. Add the tin of chopped tomatoes, tin of coconut milk, mango chutney, tomato puree, and curry powder.
    3. Add two good pinches of salt.
    4. Stir everything together until thoroughly combined.

  • Step 3 : Cook the Potato Curry

    1. Put the lid on the slow cooker.
    2. Cook on low for 8 hours or on high for 4 hours.
    3. Once the cooking time is complete, taste the beef curry and add more salt if needed. The beef should be completely tender.

  • Step 4 : To Serve

    Garnish the slow cooker curry with freshly chopped coriander if desired. Serve hot with rice and/or naan bread or enjoy it by itself as a hearty potato curry stew.
