Rarely available, lean minced Venison is ideal for home-made burgers and a good low-fat alternative to minced beef.
Our venison is from wild red deer from UK estates, which have grazed freely on a mixed diet which gives it the wonderfully woody, almost fruity flavour. The meat is matured for 10 - 14 days to tenderize and allow the flavours to develop fully. The mince is hand prepared and cut from the haunch (and occasionally loin) by our master butchers here in Linlithgow.
Wild venison is sometimes described as the clean, healthy red meat. Compared to beef, venison is not only lower in fat and calories, but higher in trace elements like iron and vitamin B. The meat has a fine, close grained texture and very little marbling. Since venison is low in fat using bacon or an oil based marinade helps to add extra moisture. Venison will not benefit from long slow cooking and is best served pink.

Your meat order is kept cool in transit because we either use an insulated expanded polystyrene box, or a recyclable tough corrugated cardboard box which is foil lined and insulated with bubble wrap. Both boxes are leak-proof and sturdy.
To keep your delivery cool, it is packed along with specially designed ice packs. Our ice packs are made with a frozen water-based gel, which keeps the meat at the correct temperature for up to 48 hours. When the ice does melt, it stays as a gel, which prevents the delivery becoming wet.
