  • 1kg boneless pork loin joint
  • Olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 4 cloves minced garlic
  • 4 tbsp honey
  • 3 tbsp soy sauce

Method

  • Step 1

    Remove your pork from the fridge an hour before cooking and bring to room temperature

  • Step 2

    Preheat your oven to 200°C. Pat dry with kitchen roll before rubbing with the oil

  • Step 3

    Place the joint in a Pyrex dish. Rub the pork loin in the paprika, garlic powder, onion powder, rosemary, salt and pepper

  • Step 4

    Mix the honey, minced garlic and soy sauce. Pour half the mixture over the pork loin and put in the oven for 25 minutes

  • Step 5

    Remove the loin and lower the oven to 170°C. Add the rest of the mixture and cook for a further 50 minutes

  • Step 6

    Rest for 15 minutes before carving

    What to serve with the pork loin

    At the point where you lower the oven temperature, you could add seasonal veg to the dish. We love onions, carrots and sweet potatoes as they work really well with the honey and soy sauce. Alternatively, you could serve with a buttery garlic mash and spring greens.

    How to tell the pork loin is cooked

    If you have a food thermometer, check the temperature of the pork. In the thickest part of the meat, it should be at least 64 to 70°C. If you don't have a thermometer, check that the juices run clear by stabbing the thickest part of the meat.

    Typically, pork loin lasts around 2 to 3 days in the fridge in an airtight container.
