How to cook a beef medallion steak

Beef medallions are best suited to fast cooking at a high heat. Follow the below steps for the best results:

1. Take the beef medallions out of the fridge for 20 to 30 minutes before cooking
2. Pat dry to remove moisture
3. Season generously with salt and pepper on both sides
4. Heat a tablespoon of oil in a frying pan to a high heat. Choose an oil with a high smoke point
5. Sear the medallions on each side for 2 minutes
6. Drop some butter and garlic in the pan and baste the medallions for a further minute
7. Remove from the pan and rest for 5 minutes before serving
8. Create your sauce to accompany the beef medallions

Your meat order is kept cool in transit because we either use an insulated expanded polystyrene box, or a recyclable tough corrugated cardboard box which is foil lined and insulated with bubble wrap. Both boxes are leak-proof and sturdy.

To keep your delivery cool, it is packed along with specially designed ice packs. Our ice packs are made with a frozen water-based gel, which keeps the meat at the correct temperature for up to 48 hours. When the ice does melt, it stays as a gel, which prevents the delivery becoming wet.
