Pork belly is one of the most popular cuts from the pig.
The cut is sourced from the underside of the animal. The name refers to the meat that runs alongside the stomach, rather than to the stomach itself.

It is a cut that is ideal for roasting. Before cooking, allow the meat to come to room temperature.
We always suggest scoring the fat almost all the way through to the meat, and seasoning before you put it in the oven.
Place the belly on a bed of your choice of chopped vegetables, put in a very hot oven. After 15 minutes, turn the oven down to 170° and cook for a further 2 and a half to 3 hours.
