
Braising steaks are a flavoursome cut of meat that’s perfect for hearty winter meals like stews, casseroles and pies. But you have to make sure you’re cooking properly to get the best out of a braising steak.

Braising steak refers to several cuts from a cow’s hard-working muscles. They’re tasty cuts of beef that are best suited to low and slow cooking, as they can contain a high level of connective tissue and fat.
Braising steaks are sold in full steaks or diced. They’re typically much more affordable cuts but can be used in some really tasty meals.
Whether you’re cooking your braising steak in the slow cooker or oven, it’s best to start with a sear.
Take the meat out of the fridge for around 30 minutes before cooking. Then, heat a frying pan with olive oil and add the meat. Brown on both sides for 1 to 2 minutes before removing from the heat.
Preheat your oven to 140 to 160°C. Add your browned braising steak to an oven-proof dish with your chosen veg – carrots and onions work really well. Then, add your beef stock and season to taste.
Cook for 1 hour and 30 minutes to 2 hours until your meat is tender. Cover for the first hour to ensure the dish retains the maximum amount of moisture.
Like with oven cooking, start by browning your meat. Once ready, add to your slow cooker with veg and beef stock. Then, heat on low for around 8 hours. If you’re short on time, you can heat on medium for around 6 hours.
For the best result, avoid cooking on high as this will impact the taste of the meat and give it a chewy texture.
