Procured from the hindquarter of cattle, silverside beef can be described best as a lean, boneless cut of meat. It features only a sliver of marbled fat and a wide-grained texture. Silverside beef is quite similar to topside, but as it’s a little tougher, it does require longer cooking to achieve tenderness.

If you’re pot roasting, typically the joint will need a few hours at a lower temperature. Usually around 165?. For oven cooking, cook on a high temperature of around 220? for 20 minutes. Then, drop the temperature to 170? for the rest of the cooking time, usually a couple of hours.
